    Essential oil from Perilla(perilla frutescens var. japonica) leaves were extracted by supercritical fluid extraction(SFE) using Hexane as solvent. The effects of experimental conditions were investigated in at temperature range between 35 and 55℃, and pressure range between 80 and 150 atm. The optimum extraction condition for perilla ketone was 45℃ and 120 atm. Total amount of essential oil extracted was 1.79mg per 1g of perilla leaves. Essential oil were then analyzed by gas chromatography (GC) and gas chromatography / mass selective detector (GC/MSD). Total 17 components including 6 hydrocarbons, 7 alcohols, 3 aldehydes and 1 ketone were identified showing that Perilla ketone was the principal component(92%) Extracted.
