    Mushroom tyrosinase(EC 1.14.18.1) is a copper containing oxidase that catalyzes both the hydroxylation of tyrosine into o-phenols and the oxidation of o-quinones, and then forms brown or black pigments. Nowadays mushroom tyrosinase has become popular because it is readily available and useful in a number of applications. In the present study, effect of oxamate derivative salts on the activity of mushroom tyrosinase for the catalysis of L-tyrosine was carried out. A kinetic analysis showed that the oxamate derivatives were mixed type inhibitors. The order of inhibition activity was : kojic acid>disodium salt>monosodium salt>arbutin. Recently, the use of kojic acid was prohibited because it was proved to be a carcinogenic material.
