    Chionanthus retusa.(Chionanthus retusa LINDLEY ET PAXTON) leaves were investigated to process it as the functinal food. Some chemical components and antioxidative, nitrite scavenging and antimicrobial activities of solvent extracts derived from leaves of the Chionanthus retusa. were examined, the biological activities of that were identified. The compound 1 was isolated from the leaves of Chionanthus retusa, and their structures were identified with 2D-NMR(HOMO-COSY, HETERO-COSY, HMBC) technigue as well as Mass. The biological activity and kinetic study of isolated compounds were tested with mushroom tyrosinase. The results obtained were as follows; 1. Among the proximate composition of Chionanthus retusa, nitrogen free extract, crude protein and crude fiber contents were relatively high. Of the mineral component contents, Ca and K was maintained relatively higher level in leaves. Among free sugars, glucose was the highest contents in 32.55 mg%, sucrose was 14.11 mg%. Of the vitamin C component was 16.55 mg%. 2. A particular total amino acid was high level in lysine(103.16 mg%). Among fatty acid compositions of 34.21 area% in leaves, parmitic acid was higher in polyunsaturated fatty acid fraction, while compositions of 30.36 area%, oleic acid was higher in saturated fatty acid fraction. 3. Ethyl acetate fraction and butyl alcohol fraction from a series of solvent fractionation of methanol extract showed better results in the antioxidative activity and nitrite scavenging activity. A particular reducing power was high level in ethyl acetate fraction. 4. Ethyl acetate fraction of Chionanthus retusa. leaves gave best antimicrobial activity ; 18 mm, 16 mm clear zone for Bacillus cereus, Escherichia coli respectively. 5. Bioactive compound 1 was isolated from butyl alcohol fraction of Chionanthus retusa. leaves. The structure are identified as luteolin - 4' - O -glucoside. ◁그림 삽입▷(원문을 참조하세요) 6. IC_(50) value of the DPPH free radical scavening activity of compound 1 was 6.3 ㎍/mL. Tocopherol (IC_(50) 3.8 ㎍/mL), BHT (IC_(50) 4.2 ㎍/mL). 7. IC_(50) value of luteolin - 4' - O - glucoside against mushroom tyrosinase was IC_(50) 23.2 ㎍/mL. In kinetic study of isolated tyrosinase inhibitor : compound 1 was shown competitive pattern in analyzing with Lineweaver-Burk plots.
