  1. [국내논문]   Biochemical Nutritional Status of Serum Lipids, Protein, and Blood Glucose in School Children in Bucheon

    This study was conducted to evaluate nutritional status of school children by biochemical assessment method. Subjects were 308 school children from 4th to 6th grade living in Bucheon city. Their blood glucose, total protein, albumin, total cholesterol, and triglyceride (TG) concentrations were determined. Mean blood glucose concentration was 77.56 mg/dl and $81.2\%$ of children had normal blood glucose concentration. The average proportion of hypoglycemia was $18.8\%$ among the three grades and prevalence of hypoglycemia in 4th grade school children was highest ( $21.8\%$ ). Mean serum total protein and albumin levels were 7.14g/dl and 4.35g/dl, respectively, and all the subjects except only one were in normal range of total protein and albumin. Mean serum TG and total cholesterol concentrations were 145.82mg/dl and 94.50mg/dl. Serum TG and total cholesterol levels showed same pattern that the concentrations decreased in proportion to grade. Especially, there was significant difference between grades in serum total cholesterol. Furthermore, $11.7\%$ of 4th, $6.8\%$ of 5th, and $2.8\%$ of 6th grade school children have borderline hypertriglycemia or hypertriglycemia, risk factors of obesity or cardiovascular disease later in life. Taken together, there was conflict phenomenon that undernutrition of hypertriglycemia and overnutrition of hypertriglycemia existed together. Therefore, it is needed to develop discriminating and personalized nutritional feeding, counseling, and education program to cover the children of under- or over- nutritional status.

    The study purpose was to examine which factors including health perceptions & behaviors, psychosocial factors, dietary intakes were different by stages of change to reduce fast food consumption among university students. Survey data(n = 341) were analyzed using X $^2$ test or analysis of variance. With respect to stages of change, $17\%$ were in the precontemplation ; $21.4\%$ for contemplation, $19.7\%$ for preparation, 11.7% for action, and $30.2\%$ for the maintenance stage.     In order to investigate the differences in nutrient intakes and eating habits between people living alone and people living together with family or others by age group, dietary survey data of the subjects aged 20 years or older from 2001 Korean National Health and Nutrition Survey were analyzed. Living status of the subjects was defined as 'single' when the subjects' household member was one person. Age, gender, income, education were adjusted during the comparative analysis. The subjects living alone had diets with lower score of nutritional adequacy ratio and lower quality, and drank more alcoholic beverages when compared with the subjects living together. Females were more greatly affected in dietary intakes by living alone situation than males. Of the four age groups, a group with ages from 30 to 39 years showed less nutrient intake patterns in persons living alone than in persons living together, but the rest three groups with ages from 20 to 29, from 50 to 64, and 65 or older did not show any significant differences. Eating habits of the subjects living alone, such as skipping meals, kinds of snacks, dining-out, were worse as a whole than the other. In conclusion, single living particularly of females or of 30 to 39 years of age group had negative influences on dietary intakes and behavior. There may be statistical errors if socioeconomic and demographic factors such as age, gender, income, and education are not controlled in the population study investigating the effect of living alone on dietary intakes. Further studies will be needed to know the age-specific reasons for the worse nutrient intakes of single living persons.

    It has been suggested that dietary fat increases the risk of breast cancer by elevating serum estrogen concentrations. However, studies on a relationship between fat intake and breast cancer risk have shown contradictory results, possibly because the levels of fat intake in study populations were too high to observe differences. Also, the effect of other dietary factors may present. The present study was performed to investigate the relationship between diet and estrogen metabolism in premenopausal women whose usual fat intake is relatively low compared to their western counterparts. Twenty lacto-ovo vegetarians (LOV) and twenty omnivores participated in the study. Three day food records including a Saturday or a Sunday were used to estimate nutrient intake. Serum lipids, estradiol, sex-hormone binding globulin, and urinary estradiol were measured. Study results showed $24.8\%$ and $20.9\%$ of energy intake were provided from fat in omnivorous and LOV subjects, respectively. Serum and urinary levels of estradiol were two times higher in omnivores. Fat intake was not related to either serum estradiol nor urinary estradiol when the Spearman correlation coefficient analysis was performed. Carbohydrate, total dietary fiber and soluble dietary fiber intakes were negatively related to serum estradiol concentration. Legumes, vegetables and fruit consumption showed significantly negative relationships with both serum and urinary estradiol concentrations. These results indicate lower estrogen availability may be associated with plant food­based diets in premenopausal women whose usual diets contain less than $25\%$ of energy as fat.

  5. [국내논문]   Food Habits of Korean Immigrants Living at Pacific Coast Areas by Length of Residence

    A convenience samples of Korean-Canadian/American adults who lived in Pacific coast areas, were studied in 2000. Total of 130 adults of 37 ( $29\%$ ) from Vancouver, 45 ( $35\%$ ) from San Jose and 47 ( $36\%$ ) from Los Angeles were analyzed by length of residence, as the shorter residence group resided for less than 20 years and the longer residence group resided for 20 years or more. It was observed that the Korean-Canadians/Americans, who resided there for almost two decades, still kept Korean foods and food-patterns very strongly, even though parents' generation showed less acculturated food patterns than children's generation. In spite of those practices, they gave high values mostly on their dietary acculturation and on educating their children about diets. However the longer residence group showed slightly less positive acculturation attitudes than the shorter one. Therefore the longer abroad seemed to make immigrants more for their children to keep dietary traditions. It is recommended that length of residence should be considered when planning dietary foodservices at nursing care systems for Korean Canadians/Americans.

    This study was done to investigate effects of antioxidant supplementation on phytohemagglutinin (PHA) -stimulated interleukin-2 (IL-2) production by peripheral blood mononuclear cells (PBMCs) in elderly women. This study was designed as a placebo-controlled, single-blinded, randomized intervention trial. Twenty four elderly women aged over 60 years, visitings social welfare center in Seoul were divided into 3 groups, placebo (n = 8), vitamin C supplemented (n = 8) , and vitamin E supplemented (n = 8) groups. Experimental groups were given either 1000mg of L-ascorbic acid or 400 ill of d- $\alpha$ -tocopherol for 4 weeks. There was no significant difference in antioxidant vitamins intakes and their plasma levels among pre-intervention groups. Plasma vitamin C or E levels was significantly increased after vitamin C or E sup-plementations. The increases of plasma thiobarbituric acid-reactive substance (TBARS) levels in the placebo group were significantly higher than those of the supplemented 2 groups. There were no significant differences in the changes of plasma IL-2 level between pre- and post-intervention among the 3 groups. However there was a significant increase in PHA­stimulated IL-2 production by PBMCs after 4-week vitamin E or vitamin C supplementation. Particularly, vitamin E supplemented group showed a higher PHA-stimulated IL-2 production than vitamin C supplemented group. These results indicate that vitamin E or vitamin C supplementation might enhance mitogen-stimulated cytokine production by immune cells, which could be one of the factors to improve health status in the elderly.

    Nutrition factors play an important role in the pathogenesis of osteoporosis. The purpose of this study is to investigate the relationship between nutritional status and bone mineral density of elderly women. Three hundred thirty five elderly women (over 65 years) in Asan were divided into three age groups (group 1, less than 70 y ; group 2, from 70 to 75 y ; group 3, 75 y or more). Total alkaline phosphatase and serum calcium (Ca) were analyzed using spectrophotometric procedure. Data for food and nutrient intakes were obtained by a 24-hour recall method. Bone density was measured by broadband ultrasound attenuation (BUA) using QUS-2. Age differences were tested with the X 2 test for categorical variables and with ANOVA and Tukey's test for continuous variables. Correlation was conducted to test the association between bone density and nutrient intake. The subjects in age groups 1,2 and 3 were $36.7\%$ , $32.8\%$ and $30.4\%$ , respectively. Height and body weight of the subjects were significantly decreased with age. Average bone density of the subjects in group 3 was lower than the other age groups.     Identifying quality attributes with the greatest value to the residents is important if the Continuing Care Retirement Community (CCRC) is to increase the frequency of residents' dining. However, it is not known which specific attribute is relatively more important than others to evaluate foodservice. The purpose of this study is to identify the relative importance of food and service quality attributes in the evaluation of foodservice in CCRe. This study surveyed the independent living residents of three CCRCs in the Midwestern states. Respondents placed great importance on taste and flavor of food which has the highest percentage of utility range ( $28.28\%$ ) and the second greatest on appearance of the server ( $23.46\%$ ) . The important attributes were ultimately used to predict the most preferred choice of food-service for residents. Knowledge of the importance of the attributes would enable the foodservice managers in CCRCs to manipulate those attributes to enhance the residents' perceptions of quality and identify strategies for continuous improvement.
